Fullblood Canadian Wagyu
The fullblood Canadian Wagyu is born and raised here in Ontario with its genetics traceable back to Japan.
Grass Fed Grain Finished
Grass fed on pastures for the majority of its life, finished on a grass/grain blend to bulk up and develop marbling.
Primal - Chuck
The chuck or shoulder is the most complex primal, consisting of both tender uncommon steaks and flavourful roasts.

About the cut

The denver is another treasured steak known only to true steak aficionado. It also comes from the chuck primal of the beef with its closest neighbour being the chuck eye steak. It's sometimes referred to the boneless short rib since it sits just above the first 5 ribs of the animal. It's heavily marbled packed with flavour and also happens to be the 4th most tender cut from the entire animal.

If you haven't tried a denver steak you won't be dissapointed.

How to prepare

The denver can be prepared like another tender grilling steak.

Seasoned generously with salt, pepper, garlic powder and cooked on the BBQ using the reverse sear method with a little pecan or apple wood smoke, mmm mmm thats good eating.

If you don't have a BBQ, the pan sear method will serve you well. Sear it this hot and fast on a cast iron skillet to develop that oh so perfect crust. Drop the heat and finish it with a garlic and thyme infused butter baste. You can't go wrong.

If you're into modernist cooking then a combination of sous vide and pan sear or BBQ is going to be your jam. Sous vide to a perfect medium rare of 134F and finish it with that butter baste in the pan, or hot and fast over charcoal.
