These beauties are made from the trim off our 45 day dry aged Wagyu rib eye and strip loin steaks and some pure wagyu chuck. The meat is partially frozen then ground just once on a 6mm grinding plate, not too fine and not too course. Next they are carefully formed by hand so they just barely hold together. They are frozen and vacuum sealed to preserve their shape and structure.
Cook these beauties from frozen, season like you would a steak, generously with salt and pepper. We'd recommend you cook these in a pan to form that perfect crust and a juicy interior.
