About the cut
The ranch steak, not sure why it's called that, is a lean flavourful cut of beef that comes from the chuck or shoulder end of the animal. More specifically it's cut from a group of muscles collectively called the shoulder clod. The ranch steak comes from the centre of those group of the clod heart.
It's is a bit toothsome
How to prepare
The ranch cut comes from a locomotive part of animal, which means it's big on flavour so it's best prepared with a 4-8hr marinade that can complement its bold flavour. It's still pretty tender so a hot sear and a finish in the over to about 135F will result in a wonderfully tender easy cooking weeknight steak.
As far as marinades go, it doesn't have to be complicated. Fresh herbs, garlic, lemon juice, salt, pepper and a neutral oil will be excellent. But this is you cooking, don't be afraid to get adventurous with more exotic combinations like a Korean bulgogi marinade.
